Tater Tot Hotdish: eat one plate, then grab some more.
Is it a Minnesota thing? Maybe. All I know is it’s the best =D

- extra-virgin olive oil
- 1 lb ground turkey
- 1 yellow onion, diced
- 1 tsp paprika
- 3 garlic cloves, minced
- 1 cup green beans
- 1 1/2 cups corn
- 2 cans cream of mushroom (about 10.5 oz each)
- 1 lb frozen tater tots
- 12-inch skillet
- 9 x 13 inch baking dish
- Preheat oven to 375 F.
- In a 12-inch skillet, add oil over medium-high heat. Once hot, add turkey and onions. Add salt, pepper, and paprika. Brown the meat (about 10 min). Halfway through, add garlic. Depending on how lean the meat is, you may want to drain the fat through a colander.
- Coat a 9 x 13 inch baking dish with cooking spray. Add the turkey first. For the next layer, add green beans and corn. Then add cream of mushroom. On top, add frozen tater tots.
- Bake uncovered for 1 hour. Optionally, you can broil near the end to give the tater tots a nice brown.
